Jam Thumbprint Cookies


Having just had the holiday season wiz by has left me with loads of dessert recipes I intend to carry out making throughout the year. One of those being this non-traditional sugar cookie recipe. Sugar cookies are all well and good normally, but adding something as simple as jam surely makes them showstoppers.

When I had crafted these, I didn't make them like a typical thumbprint cookie because I didn't realize there was even a classification as such. That being said, I made these in a way I knew from a similar looking cookie. Either way, I'll share both techniques; though the thumbprint way is much easier.

Ingredients:
2 1/2 cups all-purpose flour 
1/2 teaspoon baking powder 
1 cup butter, softened 
1 1/4 cup sugar 
1 egg 
1 teaspoon vanilla extract 
Flour or powdered sugar, for rolling out dough
1 jar of jam

Set oven to 375 degrees F
Bake time: 8-10 minutes
Recipe Level: Easy

Steps:

1. Mix all of the dry ingredients.
2. Add the wet to the dry. Knead together.
3. Roll out the cookie dough on flour or powdered sugar to about 1/4 inch thick.
4. Cut out circles (or whatever shape desired).
5. With half of the cutouts, cut out the center, like a donut.
6. On your cookie sheet, layer a hollowed-out circle on top of a solid one.
7. Add a spoonful of jam to the center.
8. Bake!

3. Roll the dough into 1 inch in diameter balls.
4. Once on the cookie sheet, press each dough ball down to 1/2 inch thick.
5. With your finger, make an indent (diameter is up to you) in the center about 1/4 inch deep.
6. Add a spoonful of jam to the center.
7. Bake!
