Risotto & Pan Seared Chicken


I am so excited to share this recipe with you! The other day I made this risotto dish for the first time. After reading various recipes, I dove into making this comfort food. It is creamy with the perfect hint of more poignant flavors, like onion. Many recipes add the chicken to the risotto; however I decided to keep it separate, so it could be enjoyed together or apart as desired. The chicken in itself was so simple to sear, yet so flavorful (step 2). Will likely make chicken like this more frequently. If you're looking for a future fan-favorite dish for dinner time, definitely give this recipe a shot! 

Ingredients
3 cups water
4 cups of chicken broth 
4 tablespoons unsalted butter
2 skinless, boneless chicken breast halves
3/4 cup of yellow onion, finely chopped 
1/2 cup dry white wine (I used Pinot Grigio)
1 1/4 cups Arborio rice 
1 cup of frozen peas
1/2 cup grated aged Parmesan 

Steps
1. In a saucepan, combine the broth and water. Over medium heat, bring it to a simmer. 

2. While that simmers, season the chicken with salt and pepper. Bring a skillet to medium heat and melt 1 tablespoon of butter. Cook chicken through until golden brown, flipping as needed. Set aside on a plate. 

3. In that same skillet, melt 1 tablespoon butter. Add the onions. Season with salt and pepper as desired. Cook until translucent, stirring occasionally. Melt 1 more tablespoon of butter in the skillet. Add the rice and cook until translucent. This should take approximately 1 minute. Add the wine to the skillet and boil for around 1 minute. 

4. Begin ladling the broth into the skillet to cover the rice. Simmer away the broth stirring constantly. Repeat this until the rice is thick and creamy. This took around 20 minutes and not all of the broth was used. Add the peas. Continue cooking for around 5 minutes, stirring constantly. Combine the parmesan. Remove the skillet from the heat. 

5. Serve and enjoy! :)

This dish isn't particularly quick to make; especially doing it for the first time. However the result makes it worth it and it will likely become a recipe put into the regular rotation of meals. Let me know what you think!
