Oeuf Cocotte au Jambon, Gruyère, et Ciboulette


I'm crazy for oeuf en cocotte! This creamy cheesy dish is incredibly easy to make for breakfast, lunch, or dinner. It's egg-cellent! A variety of ingredients can be used... basically anything you fancy can be tossed in a cocotte with an egg! 

In our fridge, we had some leftover ham and gruyère cheese from when I made croque monsieur. You can see my video on it here. (Let me know if you want a recipe!) I really wanted to use up these ingredients, so I brainstormed what they would be good for and settled on the classic oeuf cocotte. I also had some green onions and chives calling my name, which of course made it into this tasty breakfast!

Ingredients

1/2 tablespoon of butter, softened

1/4 cup of grated gruyère cheese (when it comes to cheese, measure with your heart)

1/4 cup of chopped ham, already cooked

1/4 cup of heavy cream or half and half 

1 tablespoon of chopped green onions, to taste

1 egg

salt & pepper to taste

chives to taste

Steps

1. Preheat oven to 375 degrees F. In a kettle, boil water.

2. With softened butter, grease the inside of a cocotte. You may not need all of the butter. Add the heavy cream or half and half to the dish. Sprinkle in the ham, gruyère cheese (reserve some for topping), chopped green onions, and some salt and pepper.

3. Crack the egg into the cocotte being sure the yolk stays intact. Top with more gruyère, chopped green onions, and a bit more salt and pepper to taste.

4. Top cocottes with lids. Place the cocottes in a roasting pan. Pour boiling water into the roasting pan so the water level reached about half way up the cocottes.

5. Bake for 10 minutes with the lids still on the cocottes. Then remove the lids and continue baking for approximately 5 more minutes, or until the egg whites are set but the yolk is still runny.

6. Top with fresh or dried chives and enjoy!


Notes

Other great additions or substitutes for oeuf cocottes: 

Cheese: Comte, fontina, jura montagne, or any mature cheddar 

Veg: Tomatoes, green pepper, peas, mushrooms, spinach

Herbs: Oregano, dill, 

Other: Bacon, sausage, & creme fraiche
