Caprese Grilled Cheese


One of my new found loves is caprese salad. As a former hater of raw tomatoes up until a couple of months ago, I never bothered to try that tasty dish. It wasn’t until my travels to Europe that I gave raw tomatoes and that salad a chance. In the spirit of adventure and new beginnings, I couldn’t turn my nose up to any foods in foreign lands. That led me to trying loads of things that I normally wouldn’t, which I can’t say I regret. Yay food!

Honestly I've been obsessed with all things caprese this summer. Beyond the salad, the basics of tomato, mozzarella, and basil are a fab addition to many dishes, like pasta and chicken. I was eager to incorporate it into other recipes when possible. Such an opportunity arose last night for dinner.

I was trying to think of a light fresh sandwich that’d go well with a salad. After an unsatisfied craving of a caprese salad earlier in the day and a bit of digging around on Pinterest, this grilled cheese was born. This sandwich just makes sense. Grilled cheeses are great as is, but add fresh veg to the mix? Forget about it (imagine that said in Buddy from Cake Boss’ voice). Delizioso!

Ingredients 
  • Extra Virgin Olive Oil 
  • 2 Slices of Italian Bread 
  • Mozzarella 
  • Tomato 
  • Pesto 
Steps 
  • Preheat pan over medium heat. Slice bread to 1/2 inch thick, mozzarella to around 1/8 inch thick, and tomato to 1/4 inch thick. With a basting/pastry brush, apply olive oil to one side of each slice of bread. Place one slice of bread, oil-side-down, in the pan. Add sliced mozzarella, then tomato, and then another layer of mozzarella. With a butter knife, add pesto to the other piece of bread on the oilless side. Place that piece of bread, oil-side-up, on top. Grill and flip until golden brown. 
 This sandwich pairs nicely with a balsamic vinaigrette salad!
