For years oatmeal has been a go-to breakfast and even snack of mine. It is so filling and can be jazzed up in all sorts of ways with other healthy finds. Recently, I have gotten into the overnight oats kick eliminating the step of boiling water and focusing on the meal prep. In the evening I’ll throw in whatever suits my fancy and wakeup to a delicious breakfast already prepared. Being a student and self-employed over winter break, it is great having the routine that comes with meal prepping and waking up to breakfast jumpstarted. It’s very efficient. It's also so fun trying out different versions of overnight oats! A favorite of mine is this blueberry muffin recipe:
Ingredients:
Evening
1 cup Quaker oats
1/2 tsp brown sugar
1/2 tsp vanilla extract
1/4 cup blueberry yogurt
1/3 cup milk
Morning
Blueberries
Crumbled graham crackers
or blueberry muffin
Steps:
1. Toss all of the "Evening" ingredients into a mason jar the night before you'd like to eat your oats. Let science take care of the actual creation of overnight oats.
2. Garnish with the "Morning" ingredients.
3. Enjoy!
