Homemade Cornbread


Oh cornbread- what a wonderful treat! The other day I made a pulled chicken meal in the crockpot and was trying to brainstorm different sides that would pair well with it. Out of the blue I thought of cornbread! While this country classic is good from the box, there's just something about homemade. Maybe it's the ability to adjust the ingredient ratio (more sugar? yes please), or the love and care you pour into it while making it, but homemade cornbread is a delicious addition to the dinner table. Read on for my recipe!

Ingredients
1 cup of yellow cornmeal
¾ cup of all-purpose flour
⅓ cup of sugar
3 teaspoons of baking powder
¼ teaspoon salt 
¾ cup of milk 
⅓ cup of butter, softened
1 egg 

Steps
1. Preheat the oven to 400°F. Spray or lightly grease a loaf pan. I use this one from Pyrex. 

2. Combine the dry ingredients in a large bowl: cornmeal, all-purpose flour, sugar, baking powder, and salt. 

3. Mix in the milk, egg, and butter. Stir and pour into the pan

4. Bake in the oven for 25-30 minutes, or until a toothpick can be inserted into the loaf and come out clean.
