Strawberry Apple Rhubarb Hand Pies


Crisp air, colorful leaves, and PIE! That's what fall is made of. Sure enough we have the crisp air and colorful leaves here in New England. (Get a glimpse of the seasonal goodness on my Instagram!) To round that out, it is time to have pie on hand, and what better way than a hand pie! This mini pie recipe is so simple and customizable. In as little as four ingredients and a few steps, you get these great treats that everyone will be grabbing for. I will say this recipe is inspired by the lovely Domestikated Life blog. She did some delicious blueberry and peach ones. 


Ingredients
Pie crust (a frozen one thawed out or your favorite one)
Strawberry Apple Rhubarb Jam
Apples
Egg

Steps
1. Roll out your crust and cut circles into it. I used an old lid from soup, but a standard drinking glass would work, too.
2. Wash and slice apples. Coat with jam. Spread jam on the bottom crust and spoon on a few apple slices. Top with more jam.
3. Prick the top crust with a fork and place on top. Crimp the edges together.
4. Combine the egg with some water and egg wash the top of the pie crust.
5. Bake at 425 degrees F for 20 minutes or until golden brown.
